Ingredients

  • 10 x 150g pork scotch fillet steaks
  • 100g semi sundried tomatoes chopped
  • 200g feta cheese
  • 40g seeded mustard
  • 60g brown sugar
  • ½ bunch shallots sliced
  • 1 red capsicum diced
  • 1 green capsicum diced
  • 40ml brown vinegar
  • 40ml olive oil
  • 5 sheets puff pastry

Method

  1. 1.
    Mix together pork steaks, semi sun-dried tomatoes, feta, mustard, brown sugar, capsicum, vinegar and oil.
  2. 2.
    Arrange steaks and veggies on pastry and fold into pillow. Brush with egg.
