Ingredients

  • 1kg pork loin fillet 
  • 200g pie apples
  • ½ teaspoon cinnamon
  • 40g brown sugar
  • 1 tablespoon lime juice
  • Apple & sage spice glaze

Method

  1. 1.
    Mix together apples, cinnamon, brown sugar and lime juice.
  2. 2.
    Butterfly pork loin and lay apple mixture on pork.
  3. 3.
    Roll pork, secure with string and sprinkle with apple & sage spice mix.
