Small Pork Roast

Ingredients

  • 1.2 kg denuded pork rump
  • 50g spinach
  • 2 teaspoon basil pesto
  • 130g charred capsicum
  • 150g bocconcini

Method

  1. 1.
    Cut three incisions into the rump, ¾ of the way through the meat.
  2. 2.
    Spread a little pesto in each incision.
  3. 3.
    Place capsicum, spinach and bocconcini in each incision.
  4. 4.
    Secure with elastic truss bands.

General Information

Customer Cooking Instructions:



  1. Preheat oven at 220°C.

  2. Line a baking tray with baking paper; place the roast onto the tray and bake for 10 minutes, then reduce oven temperature to 160°C and continue cooking for a further 50 minutes.
