
Maple, Bacon and Apple Pork Sausages
This recipe could easily be made into thick or thin sausages, the thinner casings would create a product that is more kid friendly.

- •Lager mixing tub
Ingredients
- •8kg pork trim
- •2kg pork back fat
- •1kg pork sausage meal
- •750g diced bacon (option, fried)
- •750g maple syrup
- •800g sliced canned apple (chopped by hand)
- •250ml water
Method
- 1.Mince pork and back fat through a 10mm plate into a tub.
- 2.Add the sausage meal, water and maple syrup to the mince and mix well.
- 3.Mince the sausage mix through 5mm plate back into the tub.
- 4.Once minced add the fried bacon and apple to the sausage mince and mix well throughout the mince to evenly spread out.
- 5.Once the flavour is mixed through fill out the sausage skins of choice.
