Michael’s rolled roast

Ingredients

  • 3kg boneless pork loin, belly on
  • 2 cloves garlic, crushed
  • 2 tsp chilli flakes
  • 2 tsp oregano, chopped
  • 2 tsp fennel seeds
  • 8 large sprigs rosemary, chopped
  • 1 large bundle of continental parsley, chopped
  • 1 tsp black pepper
  • 3 tsp lemon zest
  • 1 tsp salt flakes

Method

    Score rind

    Place all ingredients, except for the olive oil in a bowl. Mix well.
  3. 3.
    Lay the loin, rind side down and place seasoning mixture evenly over the inside.
  4. 4.
    Roll and secure the roast.

General Information

Customer Cooking Instructions:



  1. Preheat oven 220 degrees.

  2. Pat the rind surface dry with paper towel. Ideally leave the loin uncovered in fridge overnight.

  3. Rub rind with oil and salt.

  4. Cook in the preheated oven for 30 minutes or until crackle begins.

  5. Reduce the oven temperature to 180 degrees, cook 30-35 minutes per kg, depending on how you like your roast cooked.
