
Michael’s rolled roast

Serves 12 people
Ingredients
- •3kg boneless pork loin, belly on
- •2 cloves garlic, crushed
- •2 tsp chilli flakes
- •2 tsp oregano, chopped
- •2 tsp fennel seeds
- •8 large sprigs rosemary, chopped
- •1 large bundle of continental parsley, chopped
- •1 tsp black pepper
- •3 tsp lemon zest
- •1 tsp salt flakes
Method
- 1.Score rind
- 2.Place all ingredients, except for the olive oil in a bowl. Mix well.
- 3.Lay the loin, rind side down and place seasoning mixture evenly over the inside.
- 4.Roll and secure the roast.
General Information
Customer Cooking Instructions:
- Preheat oven 220 degrees.
- Pat the rind surface dry with paper towel. Ideally leave the loin uncovered in fridge overnight.
- Rub rind with oil and salt.
- Cook in the preheated oven for 30 minutes or until crackle begins.
- Reduce the oven temperature to 180 degrees, cook 30-35 minutes per kg, depending on how you like your roast cooked.
