Ingredients

  • 200g pork fillet
  • 4 sundried tomatoes
  • 10g feta cheese
  • 1 teaspoon basil pesto
  • 20g sundried tomato glaze

Method

  1. 1.
    Cut a 20mm deep slice down the length of the fillet, not cutting through the ends.
  2. 2.
    Spread pesto inside the pocket.
  3. 3.
    Place sundried tomatoes over the pesto.
  4. 4.
    Layer with feta.
  5. 5.
    Secure fillet with string.
  6. 6.
    Roll sides and bottom of fillet with glaze.
