Ingredients
- •4 x 200g pork loin fillet cut 2cm thick
- •200g pork mince
- •½ fennel bulb finely chopped
- •10g jar ginger
- •20ml olive oil
- •¼ teaspoon cracked pepper
Method
- 1.Trim loin of pork of all fat and slice into two centimetre steaks. Cut pocket in the side of each steak and turn the steaks inside out to form a pot shape.
- 2.Mix together pork mince, fennel, ginger, olive oil and pepper in a bowl.
- 3.Fill pot with seasoning and secure with elastic tie at the top.

Bake at 180 degrees Celsius for 40 minutes.
