Ingredients

  • 1kg piece of pork loin
  • 2 fresh spinach leaves
  • 2 bacon rashers (rindless)
  • 100g apple, sage and pistachio stuffing mix

Method

  1. 1.
    Butterfly open loin of pork. Layer spinach, bacon and stuffing on pork.
  2. 2.
    Roll up and secure with twine. Refrigerate to set. Cut pork into steaks.

Bake in an oven proof dish at 180 degrees Celsius for 25 minutes.
