1.Cut a pocket in the rack, going in from the top near the pins.
2.Finely chop bacon, spinach, feta and mix with garlic and rice.
3.Fill pocket with rice mixture and secure with string.

Bake at 180 degrees. You can also prepare the rack with the skin on.
