Thai Pork Parcels

Ingredients

  • 400g pork leg, cut into strips
  • 50ml Thai red curry paste
  • 20g coriander
  • 1 small red chilli
  • 1 fresh pineapple, diced
  • 25g shredded coconut
  • Coriander to garnish
  • 1 sheet puff pastry

Method

  1. 1.
    Cut puff pastry into quarters, four equal sized squares.
  2. 2.
    Mix pork strips curry paste, coriander and chilli together.
  3. 3.
    Place the mixture in the centre of each square of puff pastry.
  4. 4.
    Fold up the sides of the pastry to form a boat shape around the filling, pinch the corners together.
  5. 5.
    Garnish with diced pineapple, coconut and a coriander sprig, placed on top of the boat.

General Information

Customer cooking instructions



  1. Preheat oven at 180°C.

  2. Line a baking tray with baking paper.

  3. Sit the pork parcels on the tray and bake for 35 minutes or till golden and crisp.
